Pinterest Party & Link-up (vol 36): Slow Cooker Pulled Pork

(Note: This was supposed to be posted yesterday but I literally feel asleep on the couch as I was attempting to get it done. LOL.)

Can you believe it is June already? This past week has been busy, plus JP got impetigo so it has been super fun trying to keep him quarantined so he wouldn’t pass it on to anyone else. Thankfully he is back in school and all seems well. With school winding down, I am hoping to spend a little more time on the blog.

This past week I felt like I have been completely slacking in the kitchen. To make up for it, on Sunday I pulled out one of my favorite cookbooks to try out two new recipes.

I started following Lisa’s blog 100 Days of Real Food two years ago when Brian was first diagnosed with cancer. It was a struggle to move from fast food and overly processed food to more natural cooking. Luckily, Lisa made the transition much easier with her easy and tasty recipes.

I was excited when her new cookbook came out last year. I know some of the recipes are online but there is something fun about holding a physical book and sitting down and turning real pages so I ordered a copy.

I have been working through the recipes and I have been wanting to make Lisa’s Slow Cooker Pulled Pork and Homemade BBQ sauce. I didn’t change up the recipe at all but added my photos of how it turned out. You can find the original recipe on Lisa’s blog here.

Revolution of Love - pp_pork_3Next I added the wet ingredients to the bowl and made a paste. It was poured on top of the roast, which was placed on top of a halved onion.

Revolution of Love - pp_pork_4The dish smelled sooo good as it was cooking. I didn’t want the meat falling into the fatty juice so I moved it over to a plate. I shred the meat up with a fork and cut out all the fat. Next I made a batch of Lisa’s super easy BBQ sauce and poured it all over the meat. (Since the BBQ recipe was not posted online by Lisa, I won’t post it here. You can google another homemade BBQ recipe or buy the cookbook. šŸ˜‰ ) Was the BBQ sauce good? Well, next time I need to double the batch because the fam licked the bowl clean!

I had some “days old” whole wheat hamburger buns to finish up so I buttered them and sprinkled them with garlic salt and cooked them in the toaster oven until they were lightly toasted. It was a huge hit. I sent a sandwich over to my MIL so she wouldn’t have to cook that night and even she thought it was great. (When you pass the mother-in-law test, you know it’s good!) šŸ˜‰

    Wow, that looks delicious Bobbi, and you did a great job capturing it in photos (I’ve recently tried to take food photos and found it to be rather challenging)! Interesting link up idea. I will have to join soon.

      Hi Jennifer Taking food photos can be tricky. Another problem is that I need to start dinner earlier so I can take photos before everyone sits down. Otherwise they are hungry at the table complaining because I need to get the right shot before I can sit and eat. LOL. I tell them at least I don’t take shots of them eating it. šŸ˜‰ I do hope you link up some time! (I opened the link up to the entire month of June because twice a month was too ambitious for me right now! haha)

    I am in a rut of epic proportions when it comes to dinner these days. l blame it completely on my kids’ high school soccer schedule. This just might be the inspiration I need to try some new things. If I remember, of course.
    That pulled pork does look good. We raise pigs for meat, and I’m all for making it in the crock pot!

      Hi Christine, it was really good! I’ve done BBQ chicken but this was the first with pork. It is great for the days when I am running around all day and am exhausted by the time I get home. Although I had to laugh at your trying to remember, sounds like me. LOL. But you have fresh meat. That would be so delicious! šŸ™‚ Thanks for stopping by!

      Hi Amber, how nice to have a hubby that cooks! I do the bulk of the cooking but Brian does give me Sunday mornings off and cooks a nice breakfast for the fam. šŸ™‚
